Circular Economy from Cocoa Shell, for Food and Non-Food Product

Cocoa shell is removed from the cocoa bean before or after the seeds are roasted, with the composition approximately 10%‒17% of the total cocoa bean weight. It is considered a by-product of the cocoa industry that is usually underutilized or considered waste. Cocoa shell has high nutritional value consist of the variety of biocompounds as phenolic, dietary fibers, theobromine and a lipid profile that similar with cocoa butter . The main application of cocoa shell in the food industry is as a source of fiber, antioxidant agent and a promising ingredient in the food industry. For non-food product, cocoa shell also has been applied for fertilizer, animal feed, water treatment and biogas.
The comprehensive study about the potensial of cocoa shell for food and non-food resources, could give the information about the promising value of this by-product to contribute to the circular economy benefits of cocoa production. The utilization of this by-product will reduce the environtal effect of the weste while give the aconomically advantage.
