Exploratory Research on the Application of Artificial Intelligence in Food Choice: A Case Study of Onions

Onions are one of the most important vegetable crops in Germany. Owing to their excellent storability, consistent quality, and strict pesticide residue control standards, German onions enjoy a high level of market recognition. In addition, onions produced in Germany are highly diverse, including yellow onions, red onions, white onions, sweet onions, as well as processed products such as canned onions. These varieties differ in flavor, usage, and consumer preferences, providing a diversified basis for the study of food choice behavior.
Against this background, Artificial Intelligence (AI) has been widely applied across various fields. However, its application in food choice behavior research—particularly studies focusing on consumers’ cognitive processes—remains relatively limited. Therefore, this study employs an eye-tracking experimental approach to investigate consumers’ visual attention characteristics and selection preferences when faced with different types of German onions, with the aim of providing theoretical support and data-driven insights for AI-assisted food recommendation systems.
