Investigation of Quality Kinetics in Under-Researched Crops Using Advanced Convective Drying

Beschreibung

Convective hot air drying remains the most widely used method for preserving the quality and extending the shelf life of agricultural crops. While the primary purpose of drying is to remove excess moisture, the process exposes products to prolonged thermal stress, potentially degrading sensitive compounds, altering colour, and affecting texture. The objective of this study is to investigate how drying conditions, specifically temperature, air velocity, and relative humidity, affect the quality of under-researched crops and to optimize these conditions for efficient moisture removal without compromising nutritional or physical attributes. The project aims to establish a data-driven framework for high-value drying.

Experiments will be conducted using state-of-the-art, high-precision laboratory dryers at the Institute of Agricultural Engineering, allowing precise measurement of product drying kinetics and the collection of samples for quality analysis, which will be assessed following standard laboratory procedures. Throughout the project, you will gain hands-on experience in experimental and laboratory work, data acquisition, and data analysis.

The project will be conducted during the summer semester, with a flexible schedule arranged in consultation with the supervisors. While some tasks can be completed remotely, the experimental tests will be carried out on-site at the Institute of Agricultural Engineering.
